Black sesame waffle, cinnamon cream


  • .30 cl of milk
  • .210 g butter
  • .35 g of dough of sesame black
  • .1 tbsp toasted sesame oil
  • .1 pinch of salt
  • .270 g of flour of wheat population
  • .35g black sesame seeds
  • .3 egg whites
  • .30 g of sugar
  • .10 cl of whipping cream
  • .1 g of cinnamon powder
  • .10 g of sugar ice
  • .5 cl of amber maple syrup


  • Heat the milk, butter, sesame paste, sesame oil and salt in a saucepan at 60 ° C. Pour three times over the sifted flour and mix. Add the black sesame seeds and mix again. Store this mixture in a warm place.
  • Whip the egg whites with the sugar with an electric mixer, add them delicately to the appliance, then pour it into a pastry bag. Mold and cook the appliance in an already hot waffle iron.
  • Mix the whipping cream with the cinnamon powder and sugar. Gently beat it with a mixer to make a scented whipped cream.
  • Add 1 tsp. tablespoon of cinnamon cream on the waffle and pour a little maple syrup over it. Enjoy.
